Who we are.

We have been producing Balsamic Vinegar for several generations…

It was originally born in that part of the Po region that later became the dominion of the Este House. More precisely, in the territories that were historically subject to the city of Modena. Here, a family vinegar was produced, differing from all others: for a different attitude, use, procedure and final result. It can hear and tell the story of a family, people, land. More than revealing itself spontaneously, it lets it be discovered by those that can understand it with open heart. Once upon a time, it was reserved to the few families from Modena inheriting this extremely old tradition through centuries, then it was taken from the garrets of noble and middle-class houses and welcomed everywhere. Using it wisely, it can reserve many pleasant and exciting surprises while cooking.

In the past, the home head, the so-called “rezdora” (housewife), was sparingly using the precious treasure. Even today it is poured in drops and the tiny dark perfumed pearls come out from the nice typical cruet one by one; not even one is wasted, in silence and under the careful stare of those present. The Balsamic Vinegar, with its double taste, sweet and sour, strong yet delicate, juice, sauce, dressing, elixir and nectar is a matchless and priceless product, a must on the table of the connoisseurs from Modena, both during the simple daily meals or during the great Christmas Eve dinner.

We produce Balsamic Vinegar of Modena PGI and Traditional Balsamic Vinegar of  Modena PDO. Our high quality products range among the most innovative Balsamic Vinegars on the market. Our main customers are chefs of top rated restaurants who have chosen us on the basis of the results achieved using our products. The Balsamic Vinegars of Modena by Compagnia Del Montale are produced only with typical grape musts from Modena and perfectly meet the dispositions ruling the production of the PDO Traditional Balsamic Vinegar of Modena, without additives and colouring agents.
